Just another Monday night in Vegas

Met some of our industry friends visiting from the Boca area in Florida the other night at the Aria Resort & Casino. We started with drinks at View Bar, and our buddy brought cigars for us to have. Before dinner. Sheesh. This bar is in a great location, but unfortunately has almost zero atmosphere being immediately off the hotel lobby and one of the first impressions that you get of Aria.

I started off with two different aperitifs – the first was Aperol with soda, splash grapefruit. Delicious and one of my favorite ways to start a meal. Next was a Negroni, my own recipe – Aperol, Hendrick’s Gin and Lillet Blanc. If you’ve never had this concoction, you need to. Now.

After opening our palates, we went around the corner to enjoy dinner at Sage, one of my favorite Vegas restaurants. First course for me was Seared Scallops with Braised Oxtail, Wild Mushrooms & Salted Caramel Reduction. Holy Hell was this good. It was very rich, but well worth the experience.

The Kitchen then sent out a mid-course for us to try which included:

-Roasted Sweetbreads with glazed bacon, creamy white polenta & trumpet mushrooms
-Slow-poached Organic Farm egg, smoked potato, shaved summer truffles & toasted country bread
-Lobster Ravioli with sugar snap peas – which was intense

My entrée was killer – seared Veal Cheeks with polenta and wild mushrooms. Also, our server sent out a taste of a 48-hour Braised Beef Belly – Wow! It was slightly smoky and reminiscent of a (non-salted) style-pastrami, simply one of the best prepared meats I’ve ever had.

Dessert was an awesome, savory Carrot Cake with Cream Cheese Ice Cream. Along with dessert I had a much needed digestif, Amaro Montenegro, a perfect way to end the meal and a wonderful evening.

Today was one of those crazy industry days that I have experienced for years, however along the way I got one of the better surprises to ever happen to me. I have read for years when a writer in the business picks a chef’s recipe or a bartender’s cocktail then attempts to re-create it at home as almost a pilgrimage to that person, however I never have been the recipient of such an event. That was until today.

Kathie Jenkins the St. Paul Pioneer Press writer, who is apparently now a HUGE fan of Aperitif, came into the restaurant and so was blown away by our Orange Semolina Cake that she made her own at home and gave us props in today’s edition! I am completely flattered that Aperitif has been so well received in Minnesota and overall in the community. Thanks very much Kathie, please keep visiting and spreading the good word!

Greetings from Woodbury, Minnesota!

Well, we just launched brunch here at Aperitif Restaurant & Bar last weekend. It is an amazing offering of plated dishes including the Shrimp Benedict, Veal Meatloaf with Bearnaise & Bordelaise sauces, fresh calzones and homemade brunch breads! Let me just say that the crew here at Aperitif has done an amazing job.

We were also featured last Thursday on Showcase Minnesota on KARE 11 (the local NBC affiliate – for the 2nd time!), with Chef Chad talking about his signature Smoked Salmon Carbonara – quite a dish!

Upcoming this weekend we have Good Friday and Easter Sunday, perfect days to check out the restaurant. We are going to be running features and specials each meal, with a fantastic Prixe Fixe, 3-Course Menu on Sunday for $35.00! Valentine’s Weekend Recap

Wow, wow and wow!  Let me just tell you how much fun we had this weekend at Aperitif Restaurant & Bar.  The 3 days and nights of Valentine’s celebrations were absolutely fantastic here in Woodbury and guests loved it!  We set records for covers and revenues, and we’re not stopping…

Guests really appreciated our 3-Course Prix Fixe menu and also the ability to order a la carte off the menu as well.  It was a wonderful experience and we can’t wait to do it again.

Whether they were in the lounge, bar or main part of the restaurant, guests were in a celebratory & festive mood.  We are really finding a home in Woodbury and love the guest feedback that we’ve gotten so far.  We hope to see more of you soon, let us know when you’ll be making it to Aperitif!

We’ve been working up here in the Frozen Tundra (well, not always frozen) in Minnesota with on our latest project, Aperitif Restaurant & Bar. Well, we had our opening night on Saturday, January 30th, which was a great success!

The Nyman Group has officially gotten back into Day to Day operations (serving as the Management Company for the venue) and running a restaurant with my dad has been a lifelong dream. It is a wild, amazing, exhaustive, rewarding, demanding and most of all fun process that is truly just beginning!

Night #1 is in the Books!

Well, we did it!  Aperitif Restaurant & Bar is now open, serving Dinner and our Bar menu.  Night #1 was last night, Saturday, January 30th and it went fantastic!

Aperitif – The Opening Continues…

Greetings from Woodbury, Minnesota!  We are working on the opening of Aperitif Restaurant & Bar, here in the East Metro area of the Twin Cities.  Training is on-going for both the Front of House and the Back of House, with opening week upon us!

Tested and tasted some dishes today – the kitchen team did a great job.  Wine list is finished and ready to share with the staff and the liquor list isn’t far behind!  Stay tuned for more details and look for the Aperitif website to be up and running soon…opening night, Saturday, January 30th!
